Christmas Italian Knot Cookies


3/4 C granulated sugar
3 large eggs
1 stick melted butter (unsalted)
6 tsp baking powder
1/4 C vegetable oil
1/4 C milk
2 tsp vanilla extract
1 tsp almond or anise extract
-Mix above ingredients and let rest for 10 minutes
4 C flour sifted
1/8 tsp salt
-Combine these ingredients and add with the above mixture
Roll dough into 1/2 golf ball size rounds, roll each into approx. 4” snake,
and form into knot shape
-Place on ungreased cookie sheet, place into 375*f preheated oven
Bake 10-12 minutes, until light brown bottoms and then cool completely
-Icing mix
1 C confectioners sugar, 1/8 tsp vanilla or anise extract and 2-3 tbsp milk
-Mix to thick consistency, dip top of cookie, place on rack w/sheet
and top with your favorite holiday sprinkles
Rest 10 minutes to set
