PEANUT BUTTER COCOA NO-BAKE COOKIES

My husband is not a huge fan of breakfast. He usually prefers to skip it altogether and move on to lunch. He will wake up in the morning, get dressed for work and head out without a bite to eat and will eat his first meal at lunchtime. I think it is absolutely absurd! A person needs breakfast in order to function well and properly and a decent breakfast at that. None of this pop tart stuff. No, no, a breakfast ought to be delicious, yet nutritious and good enough to get a person’s day going well.
Getting my husband to eat breakfast is almost impossible. He always wants to skip it and says it makes him feel nauseous when he eats right after waking up. However, he is quick to pop in a cookie when I tell him to eat something, so I know that sweets are something he will like. So I started searching for easy to eat, no utensils required, sweet breakfast foods that he might like and I came across this super easy to make and simple breakfast. It was a cookie of sorts, filled with oats, peanut butter and chocolate. Very delicious AND nutritious!
Ingredients
  • 2 cups white sugar
  • 1/2 cup butter
  • 1/2 cup milk
  • 1/3 cup unsweetened cocoa powder
  • 2/3 cup peanut butter
  • 3 cups quick cooking oats
  • 1/2 cup chopped peanuts (optional)
  • 2 teaspoons vanilla extract

 

Directions
  1. Place a piece of wax paper or foil on cookie sheet. Combine sugar, butter, milk and cocoa in medium saucepan.
  2. Cook over medium heat, stirring constantly, until mixture comes to rolling boil.
  3. Remove from heat; cool 1 minute.
  4. Add peanut butter; stir to blend. Add oats, peanuts and vanilla; stir to mix well. Quickly drop mixture by heaping teaspoons onto wax paper or foil. Cool completely. Store in cool, dry place.
